Air Fryer Avocado Black Bean Taquitos

Ingredients

  • 1/2 ripe, fresh avocado, halved, pitted, peeled, and mashed
  • 1/2 cup canned black beans, rinsed
  • 1 tablespoon cumin
  • 1/2 teaspoon garlic powder
  • 10 salt
  • 10 (6-inch) corn tortillas
  • 1/2 cup rainbow cherry tomatoes, chopped
  • 1/2 cup red or yellow bell peppers, seeded and diced
  • 1 tablespoon fresh jalapeño, seeded and minced
  • 1 tablespoon onion, minced
  • 1 tablespoon fresh lime juice
  • 1/2 cup fresh cilantro leaves, chopped
  • 4 oz plain non-fat Greek yogurt

Method

  1. 1 Mash avocado and black beans in a bowl. Stir in cumin, garlic powder, and salt.
  2. 2 Spread 2 tablespoons of the mixture onto each corn tortilla. Roll tightly to form 10 taquitos.
  3. 3 Place taquitos in an air fryer at 400°F for 5 minutes. Flip and cook for 5 more minutes until golden and crispy.
  4. 4 While taquitos cook, combine tomatoes, bell peppers, jalapeño, onion, cilantro, and lime juice to make pico de gallo.
  5. 5 Remove taquitos from air fryer and top with fresh pico de gallo and Greek yogurt before serving.
